Sweet and Sour Prawn Stir Fry

An easy stir fry recipe using only a handful of ingredients that can be whipped up in no time at all.  Perfect for a quick mid-week meal.

Sweet and Sour Prawn Stir Fry

Ingredients

For the sauce:

  • 150ml sweet chilli sauce 
  • 75ml pineapple juice
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons cornflour

For the stir fry:

  • 1 tbsp vegetable oil or oil spray alternative 
  • 300g raw prawns
  • 3 cloves minced garlic 
  • 300g rice noodles 
  • 1 red pepper
  • 4 spring onions 
  • 100g bean sprouts

Serves: 2

Method

  1. Pour soy sauce over the steak and leave for a few minutes.
  2. Add the noodles to a pan and pour boiling water over them.
  3. Leave to soften for four minutes, then drain and rinse with cold water.
  4. Heat the oil in a wok, then add the garlic, chilli and red onion, fry for a couple of minutes.
  5. Add the steak and stir fry for two minutes.
  6. Add the fish sauce and lime juice, stir in the noodles and cook for a couple of minutes to warm through.
  7. Slowly pour in the beaten eggs, leave to set for one minute, then stir to break up the egg.
  8. Stir in half the coriander, peanuts and spring onions.
  9. Then put into bowls and sprinkle over the rest of the herbs, nuts and spring onions.
