A tasty snack for lunches or picnics, these savoury flapjacks are packed full of goodness.
Ingredients
- 100g butter
- 250g porridge oats
- 2 carrots, grated
- 1 tbsp milled flaxseed
- 1 tbsp chia seeds
- 100g mature cheddar, grated
- 2 large eggs, beaten
- 2 tbsp mixed seeds (such as pumpkin and sesame seeds)
Method
- In a large pan melt the butter, then add the oats, carrots, flaxseed, chia seeds and some salt and pepper.
- Leave to cool.
- Preheat the oven the Falcon multifunction oven (fan oven setting) or fan oven to 200 °C
- Line a 20cm x 20cm baking tin with baking parchment.
- Add the cheese and eggs to the oat mix.
- Put the mixture in the tin and sprinkle the mixed seeds over the top.
- Press down with the back of a spoon, making sure it fills the tin to the edges.
- Bake for 25-30 mins until golden.
- Leave to cool completely in the tin before cutting into bars.
